Tequila’s time has come! For years, few have known how varied, complex and rewarding tequila can be. Some estate bottled tequilas being produced now are on par with the best cognacs and scotches in the world. Tequila production depends on one plant, the blue agave, which is grown in the state of Jalisco, Mexico. It is carefully cultivated for at least 8 years before it is ready to be harvested. When ripe, a harvester or “jimador ” cuts off the spiky leaves revealing a fibrous bulb called a piña. The piñas are then baked to increase sugar levels and stone ground to extract agua miel, which is the agave juice which will be fermented to produce tequila. Different methods are employed for baking, fermenting, and distilling, which is why tequilas vary so greatly.

Blanco? Reposado? Añejo? What’s the difference? Blanco or Plata is distilled and bottled immediately for a clean, crisp flavor. Reposado and Añejo are aged in oak casks to impart different colors and flavors. Reposado is aged 2 to 6 months in oak casks, and Añejo is aged for a minimum of 1 year. To be called tequila, the agave must be grown in Jalisco, Mexico and must be at least 51% agave. The purest and tastiest tequilas are 100% blue agave, and are the majority of tequilas that The Ore House offers.
